Try this surprisingly healthy frozen snack for your kids!

I love pinterest, as it gets me thinking about different recipes and crafts! I don't always follow the recipes or directions given, just because I like to use what I have onhand, instead of having to make a grocery run.  Yesterday, I wanted a cold, refreshing snack for my son after his first day at camp. I knew he'd been outside much of the day in the heat and humidity so he would be ready for a snack with some protein and one that would cool him off, too!

I remembered seeing something like this on pinterest, but just kind of winged it, instead of looking it back up for the exact proportions.  I knew I'd add some coconut oil to the chocolate chips to help make it a hard shell and that worked perfectly!

Chocolate Banana Peanut Butter Bites

one large banana, cut into thin slices
natural peanut butter
coconut oil - 1 1/2 tsp
1/2 - 3/4 c chocolate chips


Put a dab of peanut butter onto half of the banana slices, then top with another slice, making "sandwiches".


Place in freezer for about 30 minutes to set.   Remove from freezer.


 Place chocolate chops and coconut oil in a microwave-safe bowl.



Microwave for 1 - 1 1/2 minutes.



  Stir well.  I used a spoon to dip the sandwiches in the chocolate, then place them on wax paper, return to freezer until ready to serve.






David gave it a thumbs up, and he's not a big fan of bananas! Poor kiddo was exhausted after camp today.  This will be a nice, easy snack to make for the remainder of summer - I'm happy because he's getting fruit, protein, and healthy fat (coconut oil) all in one!
