National Bacon Day B1G1 @ Honey Baked Ham

Sizzling HoneyBaked Offer Helps Feeding America
Buy One, Get One, Give One on National Bacon Day

ATLANTA – Everything’s better with bacon. And this year for National Bacon Day, HoneyBaked is serving up its best – and you can feel good about eating it. On Saturday, August 31, New HoneyBaked® Sweet Glaze Bacon will be buy one pound, get one free at most HoneyBaked locations. Participating locations in St. Louis and Atlanta will donate one pound of bacon to local Feeding America food banks for every two pounds sold in stores.

New HoneyBaked® Sweet Glaze Bacon, a recent menu addition, is made from carefully selected, lean, tender meat and then slow smoked and finished with the irresistible sweet glaze taste that you can only get from HoneyBaked®.

“With just one day each year set aside for this national celebration, the guest of honor has to be really special,” said COO Maggie DeCan. “As with our hams and turkey breasts, we choose only premium, thick cuts of bacon and work our HoneyBaked magic to bring out the perfect combination of natural flavors. Our Sweet Glaze Bacon is a tasty treat at the breakfast table, a terrific accompaniment to jazz up a sandwich, and brings a bit of pizazz to salads.”

National Bacon Day is an official observance honoring bacon where guests create and consume bacon as the main ingredient. Since it is traditionally celebrated before Labor Day, it’s the perfect time to pick up a couple of pounds to make dishes for potlucks and picnics over the long weekend. And this year they’ll also help provide Feeding America with food that’s often in high demand.

“We generally have a great need for proteins,” said Leah Ray, vice president of corporate partnerships at Feeding America. “ Many people don’t think to donate food with short shelf lives to our local food banks. We are grateful HoneyBaked has helped address this need.”

To prepare your National Bacon Day celebration, visit and find the location nearest you. For dinner ideas, deals, or to join the conversation, visit The HoneyBaked Ham Company on Facebook.

How to make Outback Steakhouse's Alice Springs Chicken at home!

My Aunt Anne & I were talking yesterday about recipes, since we both love, love, love to cook & bake.   She told me about a yummy chicken dish my cousin had made from Pinterest ~ Alice Springs Chicken.  It's a copycat version of Outback Steakhouse's famous dish.  I wanted to make it for dinner tonight but....I have been stuck at home for TWO loooooooong weeks with a broken van, so I knew I was going to have to try and make this with what is on hand.  No trip to the store possible this time. So.....

There were tons of recipes out there, most were very similar. So if you want the exact copy-cat one, just keep on googling.   This one is very similar, but I ended up making a few small changes and it was amazing. So without further ado, here's what I cooked using what I had to work with!

Alice Springs Chicken

2 large chicken breasts, season with salt & pepper
1/4 c dijon mustard,  1/4 c yellow mustard, 1/4 c honey mustard
1/4 c honey
2 Tbsp Duke's mayonnaise

(the original recipe also calls for sliced, sauteed mushrooms, so feel free to add those if you like them.  We don't!)

shredded sharp cheddar cheese
chopped parsley

Preheat oven to 350 degrees.

Mix the mustards, honey and mayo in a bowl.

Place two chicken breasts in a bowl, add about 1/2 the mustard mixture as a marinade.

Cover and refrigerate remaining marinade.  Let chicken marinate in the fridge while you cook the bacon.....

Fry the bacon, then drain on paper towels.  Reserve some of the grease in the pan.

Use same pan to cook the chicken breasts.

Grease a baking dish.  Place chicken in dish.  Arrange two slices of bacon criss crossed over chicken.  Top with (mushrooms if you used them), shredded cheese, then drizzle with the reserved marinade and sprinkle with some parsley.

Bake for about 10-15 minutes til everything is crispy and bubbly and yummmmmo!

We had ours with loaded mashed potatoes *Idahoan loaded mashed potatoes* ~ I'd have preferred a good baked potato, but didn't have any, so this was the next best thing.

I wondered if the mustard would overpower the sauce, but surprisingly, it didn't. It was a delicious dinner, and my 9 year old LOVED it.  We'll be having this regularly!  Hope you try it! Please leave a comment and let me know what you thought of it, if you make this!
