Mixin' it up at the dinner table!

Tonight I'm making a few family favorites, but trying a new twist on some of them! I realized that I'm in that awful rut of making the same old stuff all the time, and it's past time to mix things up.


 So.... We love turkey meatloaf, and I have a good recipe that I always use. To mix things up, I'll be making muffin-tin meatloaves tonight so I can bag up the extras in the freezer for EASY dinners later on. Plus, smaller versions of food are always cuter and more fun to eat!

Broccolini is another family favorite - we tried it a few years ago and it's way better than broccoli! It can be hard to find though - I lucked out on some at Trader Joe's this week. I usually roast it with a dash of olive oil, dash of balsamic vinegar and a pinch of salt and pepper. Tonight I'll be trying this recipe for easy garlic broccolini.

Finally, instead of carrots, I'm going to steam some colorful rainbow carrots - purple, yellow, red and orange. Have you tried them? They are AMAZING! With a little salt and pepper - mmmm. Everyone likes them!

I'll add some cut up watermelon to our plates to round out our dinner. We are trying to eat more fruits and veggies around here, so this dinner plan will give us 2 more veggies for the day and another fruit. Yum!

I love spending time on pinterest and google looking for new recipes to try (and tweak!).  I honestly don't recall what I did in the "old" days when the internet wasn't around.  I would look at cookbooks for inspiration, but it's so nice to be able to type in what I want to make (ie broccolini) and find all sorts of new ways to prepare it!
